It looks to be random when the Zergling kills Grunty or when Grunty kills Zergling. Warcraft Pets links to some video showing this in action. Here are some shots I took.
The "kill the enemy" animation takes about 1.5s to become active on a new pet. So if you summon your pet already in range of an enemy, the existing will activate and kill the new pet in true gankage fashion.
On the other hand, if you spawn the Zergling directly on top of the Marine, the Zergling can *sometimes* get a hit in while the Marine is animating.
Since I don't have a Marine, I don't know if this trick works for them.
I did have a raid member spawn his Marine out of range and then move forward. The Zergling had to run towards the Marine and was killed in transit.
